Grown by Crystal in Palmwoods. The Chinese have been cultivating this vegetable for more than 5,000 years. One cup of cooked bok choy provides more than 100% of the recommended dietary allowance of vitamin A, and close to 2/3 the recommended daily of vitamin C. To get all the health benefits of bok choy, eat it raw in salads on some days and on other days, do a quick steam or saute with other vegetables and enjoy. Eating raw bok choy produces cancer fighting enzymes, whilst cooked bok choy boosts carotenoids thought to benefit eye health.
