This squash is Mother Nature's spaghetti maker! Cut the spaghetti squash in half lengthwise. Scoop out the seeds with a fork, being careful not to cut the spaghetti strands that are underneath. Bake in oven until tender. Once cooled, scoop the spaghetti strands out of the squash into a bowl. Sautée shallots, garlic and parsley in a pan and then lightly toss the spaghetti squash tthrough it with olive oil. Cook for a few more minutes to get all the flavors going. Oh this is heaven! Enjoy!
