Rapadura is the pure juice extracted from sugar cane using a press. This is then evaporated over low heats and ground to produce a grainy sugar. It has not been cooked at high heat and is produced organically. It does not contain chemicals or anti-caking agents. Rapadura is not separated from the molasses and is not subject to being heated at high temperatures (it is dehydrated at a low heat) the vitamins and minerals have been retained.
