Roasted Garlic (A Culinary Secret Weapon!)

Is it too dramatic to say that roasted garlic will change your life? Well, maybe. But we can confidently say that roasted garlic will change your cooking for the better! Roasted garlic is like a culinary secret weapon. A little roasted garlic goes a long way to adding an unparalleled depth of flavour, turning an ordinary meal into something memorable!
Roasting garlic mellows and at the same time intensifies the garlic. The strong, pungent flavour of raw garlic is gone, and a gentle, deep, almost sweet flavour emerges.
Roasted garlic is perfect for elevating the flavour of your favorite pasta dish. Throw a teaspoon or two in a pan of sauteed veggie like broccoli, cauliflower, asparagus, or green beans. Spread a thin layer on top of a toasted slice of baguette for some seriously impressive garlic bread.
You can store the roasted garlic in an airtight container in the fridge for 1-2 weeks.

Ingredients
- 1 garlic bulb
- 2 tsp. olive oil
- sprinkle of salt
Instructions
- Heat oven to 200 C.
- Remove the outer papery layer of the bulb, keeping the cloves intact.
- Hold the bulb on it's side, and cut off the top 1/4, or the tips, of the entire bulb.
- Place the bulb in a small, oven-safe pan, like a loaf pan. Drizzle the bulb with the oil, and sprinkle on salt.
- Tent the pan with foil.
- Roast for about 40 minutes, until you can easily poke a fork through the bulb.
- Let cool for 5-10 minutes.
- To remove the roasted garlic from the bulb, simply hold it upside down over a small bowl, and squeeze. The individual cloves will pop right out!
