Beetroot Walnut Dip
PREP TIME: 10 MINUTES // SERVINGS: 4-6 PEOPLE
- 2 x 250g packs Love Beets
- ¾ cup walnuts, toasted
- 1 cup Greek yoghurt or Coconut Yoghurt
- ¼ cup mint leaves
- 1 tsp cumin
- ½ tsp coriander seed
- ½ tsp cinnamon
- 1 tsp caraway seeds
- 1 tsp salt
- Place all spices in a small fry pan and fry on a low heat until fragrant, this should only take 1-2 minutes.
- Place all ingredients into a food processor and blend on high for 2-3 minutes until smooth.
Serve with crunch pita chips!
