3 Ingredient Mango Fruit Leather

It's mango season, and we can't get enough! We're breaking out all of our favourite mango recipes, and we're on the lookout for even more ways to use this amazing fruit!
Did you know you can make fruit leather in your oven with just a few simple ingredients! Kids go nuts over this sticky, chewy, sweet treat, and parents can feel great about it too, because it's made without any processed sugar.
These fruit leather roll-ups are perfect for packing in your backpack or purse, for a healthy, taste of Australian summer, snack on the go.

Ingredients
- 4 ripe mangoes, peeled and cubed
- 1/2 C. unsweetened apple sauce
- 3 T. honey
Instructions
- Preheat your oven to its lowest setting - This varies with each oven, but should be somewhere around 65-76 degrees C.
- Line two baking sheets with parchment paper.
- Pulse mangoes in a blender or a food processor until smooth.
- Add applesauce and honey to blender and pulse a few times to combine.
- Pour mixture onto the parchment lined baking sheets and use a rubber spatula to spread out evenly to the edges of the baking sheet. Aim for no thicker than 3.175-6.35 mm.
- Bake fruit leather for 4-6 hours, or until the fruit puree dries out and is no longer shiny. Should be dry but still flexible.
- Using kitchen sheers or a pizza cutter, cut the fruit leather into strips, cutting through the parchment paper as well.
- Roll up the individual fruit rolls, and store in an air tight container in the refrigerator.
